Raisin and Pecan 'oatmeal' cookies

These cookies are easy to prepare and delicious to eat!
They are balancing for Vata and Pitta but increase Kapha.
Vata - Pitta - Kapha +
Season: Autumn/ Winter
I use spelt flakes rather than oat flakes as they are less drying for the digestion particularly for Vata types.
Makes about 12 cookies.
Ingredients:
1/2 cup of jaggery/ coconut sugar or raw dark brown sugar
1/2 cup of ghee or butter
1 tsp of vanilla extract
1 tsp each of ground cinnamon and ground cardamom
Pinch each of dry ginger, cloves and nutmeg
1 egg
1 cup of wholemeal spelt flour
1/2 tsp of salt
1 tsp of baking powder
1/2 cup of spelt flakes or can use oat flakes if preferred
1/2 cup of desiccated coconut
1/4 cup of raisins
3 large medjool dates chopped
1/4 cup of pecan or walnuts chopped
Method:
Preheat oven to 180degrees and line 2 baking sheets.
Cream the softened ghee/butter with the sugar and vanilla until smooth.
Beat in the egg and stir in all the spices.
Add in the dry ingredients - flour, spelt flakes, desiccated coconut, salt and baking powder.
Stir in the dried fruit and nuts until evenly combined.
Scoop desert-spoon sized amounts onto the baking sheets making sure there is plenty of space between each one as they will spread slightly.
Bake for 10-15 minutes until lightly golden.
Allow to cool and will keep in an air tight container for a few days.
